Espelette pepper -> piment d'Espelette

The Espelette pepper (French: Piment d'Espelette; Basque: Ezpeletako biperra) is a variety of chili pepper that is cultivated in the French commune of Espelette, Pyrénées-Atlantiques, traditionally the northern territory of the Basque people. On 1 June 2000, it was classified as a AOC product and was confirmed as a APO product on 22 August 2002.

The plant, originally from Mexico and to a lesser extent South America, was introduced into France from the New World during the 16th century. After first being used medicinally, it subsequently became popular for preparing condiments and for the conservation of meat and ham. It is now a cornerstone of Basque cuisine, where it has gradually replaced black pepper and it is a key ingredient in piperade.

Le piment d'Espelette (ou Ezpeletako biperra en basque) est un piment cultivé au Pays basque dans le département des Pyrénées-Atlantiques. Il tire son nom de la commune d'Espelette.

Originaire d'Amérique du Sud, le piment a été introduit au Pays basque au XVIe ou au XVIIe siècle. La plante est d'abord utilisée en médecine puis très vite comme condiment et conservateur des viandes et du jambon.

En 1650, on commence à planter des piments à Espelette. Des graines sont sélectionnées donnant naissance à la variété Gorria, connue aujourd'hui sous l'appellation « piment d'Espelette ».
