The particle ἄν can't be translated by itself.  It is used to limit the force of the verb to particular conditions or circumstances.  In conditional sentences, εἰ ("if") + ἄν (contracted to ἐάν, and in turn often contracted to simply ἄν) signals a general condition ("if ever") with the subjunctive.  The adverbial conjunction ἔστε, when it means "until (when)ever," also needs an ἄν to follow it.
