Is τὴν Μύνδον accusative singular femin. of ἡ Μύνδος ?
Correct!
And ἁλμοπότιν is the accusative singular feminine of a noun ἁλμοπότις, invented by Menippus as a humorous play on the noun οἰνοπότις ("[female] wine-drinker").  The noun ἁλμοπότιν (in apposition with τὴν Μύνδον)  is in the accusative case after φησίν (understand φησίν τὴν Μύνδον ἁλμοπότιν εἶναι.
